APPELLATION: Vin Santo del Chianti Classico DOC
GRAPE VARIETY: Trebbiano Toscano
SOIL: Clay-limestone soil.
HARVEST: Hand-harvested between late August and early September. The grape clusters are carefully placed in small crates to preserve their integrity and prevent compaction during transport.
VINIFICATION: The grapes are transferred to a dedicated drying room, a carefully maintained and well-ventilated environment. The bunches are gently laid out on traditional reed mats, where they remain to dry naturally for approximately four months. During this period, they are regularly inspected and carefully sorted to remove any compromised fruit, ensuring the highest sanitary quality. Once the desired level of dehydration has been achieved, the grapes are pressed using a traditional wine press to obtain a rich and concentrated must.
AGEING: The must undergoes a slow fermentation and matures for five years in traditional caratelli, made of 90% oak and 10% chestnut wood. The wine is then bottle-aged for at least six months.
BOTTLING: December 2025.
ALCOHOL: 12.5% vol.
RESIDUAL SUGAR: 217.6 g/L.
TASTING NOTES: Deep golden colour with amber highlights. The bouquet is rich and complex, offering aromas of dried fruit, honey and candied grapes, complemented by elegant notes of dehydrated fruit. On the palate, it is rich, smooth and harmonious, balanced by refreshing acidity that enhances its natural sweetness and leads to a long, lingering finish.
